Luscious Fruit and Flax Smoothie...
I thought I would take a moment to share with you my favorite smoothie of late. I’ve made it quite a few times now and it’s everything you could want in a smoothie. Dense, satisfying, filling, sweet - but not too sweet, and nutritious. I’ll admit that as much as I love flax, I’m not always so diligent about eating it, but I just recently watched a fascinating video with Michael Gregor about the importance of Omega-3 Fatty Acids that’s got me thinking up new ways to include this vital powerhouse food into my diet daily.
Smoothies are the easiest way for me to consume flaxseed. I feel like if I do it all in one go right in the morning then it’s done and I don’t have to worry about it. If I leave it until later the truth is I’ll probably forget to sprinkle it on my salad or my pasta or my broccoli or what have you. Best to do it first thing, and why not have it in a delicious smoothie? The addition of flax to a smoothie gives the drink a really luscious texture reminiscent of a milkshake, and with the great flavor bursts in this particular concoction you’ll feel like you’re having something decadent when really you’re drinking tons of healthful nutrients, vitamins, and antioxidants. So give it a try, and enjoy!
Luscious Fruit and Flax Smoothie
1 Navel Orange
1 Banana
1-2 Handfuls Baby Spinach
1 Cup Frozen Blueberries
2 Tbsp Ground Flaxseed
1 Cup Unsweetened Almond Milk
4 Drops Liquid Vanilla Stevia (Optional)
- Combine all ingredients in a high-speed blender and blend on high for 60-90 seconds until completely smooth.
*** Note - If you can't find liquid Stevia or don't wish to use it you can use another sweetener of choice and add in 1/2-1 tsp of vanilla extract instead.***

Vanilla Orange Berry Blast Smoothie...
You all know how much I love a good smoothie right? Well over the past week this one has become my absolute favorite breakfast. The flavor is so unique a mixture of berry, vanilla, citrus and that oh so distinct grassy taste of wheatgrass. I love the not quite blended texture of the dates as well. Overall this smoothie packs an energizing antioxidant punch that’ll both nourish and satisfy you, not to mention help you through any busy Spring morning, and if it doesn’t quite feel like spring where you live then at least the light citrus notes will make you daydream of the warmer days to come. Plus, you can’t beat that beautiful, rich, majestic color. Doesn’t it make you want to smile?
Vanilla Orange Berry Blast Smoothie
1-1 1/4C Vanilla Almond Milk
1 Large Navel Orange
2 Pitted Dates
1 Scoop Wheatgrass Powder (I use Amazing Grass)
2/3-3/4C Frozen Blueberries
4 Frozen Peach Slices
½ tsp Ground Cinnamon
Dash of Ground Ginger
- Place all ingredients into a high-speed blender and blend on high for 1 minute or until smooth. Bits of unblended date pieces are okay, and highly recommended in my opinion.
*** Note - If you prefer you can use unsweetened almond or other non-dairy milk and use a tablespoon of vanilla extract instead. Though I quite like the taste and texture of the vanilla almond milk. Also how much milk and blueberries you use depends on the strength of your blender and your personal preference for how thick you want the smoothie to be.***

The Popeye...
I’ve been craving spinach lately, and oranges. Yesterday when doing my grocery shopping o bought several pounds of each. Then this morning when I awoke in dire need of a green smoothie fix I thought what better use for them? I’m sure you’re saying to yourself that spinach and orange is a strange combination, but trust me when I say they pair beautifully together. Not only is it delicious, and a wonderfully nutritious way to start one’s day, but the vitamin C from the oranges and lime juice help your body to absorb the full iron content of the spinach. Incase you didn’t know - for whatever reason our bodies find it difficult to fully absorb iron from certain leafy greens, spinach being at the top of that list. So by simply adding something containing vitamin C you dramatically improve your bodies ability to absorb this important nutrient. This by the way is important to note whether or not your vegan, vegetarian or omnivore. Iron isn’t absorbed any easier by meat-eaters which is why anaemia effects omnivores as much (if not more so) then it does vegetarians and vegans. So if you’re going to eat your greens, as you should make sure to pair them with lemon, lime, orange, tomato or any other vitamin C containing food. My opinion is to always use a lot of vitamin C rich foods in cooking anyway, because it’s one of natures most important antioxidants. How can you go wrong?
The Popeye
3 Handfuls of baby spinach
2 Navel Oranges peeled and halved
1 C chopped pineapple
2-3 packets Stevia, or other sweetener (Optional)
2 C filtered water (or more to thin if needed)
3 Tbsp lime juice
- Place all ingredients except sweetener in high speed blender and blend on high for 30 seconds to 1 minute or until completely smooth.
- Taste for sweetness and adjust as necessary, and enjoy!
Now I can’t guarantee that by drinking this smoothie your muscles are going to quadruple and bulge right out of your shirt. You’re not going to turn into the hulk or anything but I think you’ll feel a nice boost after drinking this. I did at least, by the time I’d drained my glass my energy was flowing and I was feeling pretty lively. I hope you feel the same.

*** Note - This recipe makes enough for three good sized glasses. So if you’re not looking to drink that much, or don’t have anyone to share it with then by all means cut the recipe in half. ***

Morning Apple Blaster Smoothie...
Not being much of a breakfast person smoothies have always been my go-to morning meal. In the past they’ve usually consisted of fruit, and soy milk, but over the past few months I’ve been leaning more and more towards the ‘Green Smoothies’ they’re delicious, and loaded with healthful nutrients, antioxidants, vitamins, and minerals. For a while there I was making ‘kitchen sink’ smoothies, meaning they usually consisted of at least a little of every kind of fruit and vegetable I had in the house. Lately however I’ve been favoring a more simple approach. I made this one the other morning and loved the result!
Morning Apple Blaster Smoothie
1 Organic Granny Smith Apple (if not organic remove peel)
1 Organic D’Anjou Pear (if not organic remove peel)
2-3 Small Leaves Kale
1/4 cup water Or Apple Juice (or enough to cover the blades of a vitamix, or more to thin if desired)
1 Packet Stevia (Optional)
- Blend fruit, kale, and water on high for 30 seconds to 1 minute until everything is smooth. Taste for sweetness and if it’s not sweet enough for your taste add Stevia.
Not at all a bad way to start your day. Especially one of those lovely warm summer mornings when you have some liesure time to just sit by the window and watch the world outside. Listen to some good music, read a good book... those are my favorite kind of mornings. Enjoy!
