Sensational Spring Citrus Smoothie...
If you’re living just about anywhere in North America right now, and you’re anything like me you’re probably wondering when this dreaded winter is going to come to it’s end. I mean I like winter alright - in moderation, but all these crazy snowstorms and the bone-chilling cold has got me longing for Spring like never before. Today it’s in the mid-40's which to some is still pretty cold, but to me it’s like paradise, the sun is shining, there’s no wind, it’s actually warm enough to walk outside without a parka - light jacket may be required however - and I’m beginning to feel like Spring is finally on it’s way. I know I’m ready for it, and my body is ready for it, and so are my tastebuds.
Something a lot of people don’t know about me is that I absolutely love grapefruit, and the reason why people don’t know this, is because despite my great love of this beautiful citrus I don’t really talk about it very much. Over the past couple of months I’ve been buying huge bags of ruby red grapefruits and normally I juice them along with oranges, lemons and ginger. Well, this morning I was definitely craving a mix of that sort but was too lazy to get out the juicer. So instead I whipped up this super simple, and deliciously citrusy smoothie to keep the smile on my face and remind myself that spring is only a few more weeks away. So buck up, and enjoy some citrus until it gets here.
Sensational Spring Citrus Smoothie
1 Large Red Grapefruit, peeled, pith and seeds removed.
Small handful of Fresh or Frozen Raspberries
6 Fresh or Frozen Strawberries
½ Large or 1 Small banana
5 Frozen Peach Slices
3/4 C Orange Juice
½ C Water
1 Tbsp Lemon Juice
- Place all ingredients in a high speed blender and blend for 60-90 seconds until completely smooth. For a thinner consistency add a little more water if desired.

Luscious Fruit and Flax Smoothie...
I thought I would take a moment to share with you my favorite smoothie of late. I’ve made it quite a few times now and it’s everything you could want in a smoothie. Dense, satisfying, filling, sweet - but not too sweet, and nutritious. I’ll admit that as much as I love flax, I’m not always so diligent about eating it, but I just recently watched a fascinating video with Michael Gregor about the importance of Omega-3 Fatty Acids that’s got me thinking up new ways to include this vital powerhouse food into my diet daily.
Smoothies are the easiest way for me to consume flaxseed. I feel like if I do it all in one go right in the morning then it’s done and I don’t have to worry about it. If I leave it until later the truth is I’ll probably forget to sprinkle it on my salad or my pasta or my broccoli or what have you. Best to do it first thing, and why not have it in a delicious smoothie? The addition of flax to a smoothie gives the drink a really luscious texture reminiscent of a milkshake, and with the great flavor bursts in this particular concoction you’ll feel like you’re having something decadent when really you’re drinking tons of healthful nutrients, vitamins, and antioxidants. So give it a try, and enjoy!
Luscious Fruit and Flax Smoothie
1 Navel Orange
1 Banana
1-2 Handfuls Baby Spinach
1 Cup Frozen Blueberries
2 Tbsp Ground Flaxseed
1 Cup Unsweetened Almond Milk
4 Drops Liquid Vanilla Stevia (Optional)
- Combine all ingredients in a high-speed blender and blend on high for 60-90 seconds until completely smooth.
*** Note - If you can't find liquid Stevia or don't wish to use it you can use another sweetener of choice and add in 1/2-1 tsp of vanilla extract instead.***

Spaghetti Squash Pasta with Quickie Marinara...
On these bitterly cold winter nights pasta always seems like the perfect dinner idea. It’s warm, steaming, slathered in rich tomato sauce, and it’s filling. What could be better? But maybe you find yourself feeling as I did recently, wanting - no craving - Spaghetti but not wanting all the carbs, calories, and gluten that comes with eating a big bowl of pasta. Well, I have just the thing. Spaghetti Squash! I know, it sounds crazy, but stick with me for a second. Spaghetti Squash is a great pasta substitute! Lets face it, noodles - especially the horrible for you white flour kind - have little to no taste anyway. When it comes to a good bowl of pasta it’s the sauce and the texture that make the dish good. It’s the toppings you drizzle over it that make it amazing. No one eats a bowl of noodles plain, nobody. Nobody that I know anyway. It’s all about the sauce, and with a good sauce a bowl of spaghetti squash not only tastes like pasta it looks like it too, and has a similar texture.
So, Spaghetti Squash makes a fantastic substitute and the best part about it is that it’s super low in both fat and calories. One cup of spaghetti squash only has 33 calories compared to 1 cup of spaghetti which has 221 calories. You could eat the entire squash if you wanted and you’d still only get about 165 calories! As for fat, an entire spaghetti squash only has 25 calories of fat, that’s pretty amazing! Now I am certainly not the first - or the only - person to jump on the idea of using squash as pasta. If you Google it I’m sure you can find dozens of recipes, and I’ve come across various ones in books and on blogs over the years but it wasn’t until recently that I decided to try it for myself. You see, I was always skeptical. I like squash, but spaghetti squash has never been my favorite and so I wasn’t sure how it would turn out. Even after all the rave reviews I’ve read of it I was still a skeptic. Then I saw spaghetti squash on sale, and since I’d been craving pasta I thought to myself “why not give it a try?” I mean really, what was the worst that could happen? I wouldn’t like it? No big deal. I’ve been trying to eat on the lighter side lately and so the idea of squash as pasta instead of bogging down my gut with a bunch of heavy noodles really appealed to me.
Spaghetti Squash Pasta with Quickie Marinara
2 Small-Medium Sized Spaghetti Squash
Quickie Marinara
1 28oz Can Fire Roasted Diced Tomatoes
1 6oz Can Tomato Paste + 6oz water
1 tsp Olive Oil
10 Garlic Cloves Minced
1 White Onion diced
1 C Diced Mushrooms (I used Cremini)
2 tsp Dried Basil
2 tsp Dried Oregano
½ tsp Garlic Powder (Optional if you like your Marinara a little extra garlicky)
½ tsp Sea Salt
Black Pepper to taste
1 Tbsp Balsamic Vinegar
Fresh Basil Minced to garnish
Fresh Parsley Minced to garnish
Nutritional Yeast to garnish (optional)
- Preheat Oven to 450'F
- Lightly spray a large baking dish with cooking spray and place the squash inside it. Bake uncovered for 45-60 minutes until the squash is tender and easily pierced with a fork.
- Remove the Squash from the oven and cut in half. Let stand on the counter for 5-10 minutes to cool.
- Remove the seeds from the squash and discard or save to roast. You can do this with a fork or by hand.
- Once all seeds are removed use a fork to scrape out all of the squash. Divide amongst two (or more) serving bowls and top with marinara, fresh herbs and nutritional yeast or Vegan Parm if desired.
- To make the Quickie Marinara blend the fire roasted tomatoes and the tomato paste in a blender till smooth and then set aside.
- Heat olive oil over medium and add the onions. Saute until they begin to turn soft. Roughly 5 minutes. Add in the garlic and mushrooms. Saute until the garlic is fragrant and the mushrooms are soft and they begin releasing their juice. Roughly 5-7 minutes.
- Add in the blended tomato mixture, the basil, oregano, garlic powder, salt, and pepper. Stir to combine then lower the heat and let simmer for 15-20 minutes. Add in the balsamic vinegar and stir to combine.
- When squash is ready, spoon the marinara over top and sprinkle over the fresh herbs and nutritional yeast.

Pear and Parsley Spiked Green Smoothie...
I know, two smoothie recipes in as many days? How original, but really this smoothie is freaking fantastic and I thought that since it’s January and everyone’s cleansing it might be appreciated. As I said the other day, part of my goal for this year is to make sure I start every day off right, that means getting my exercise in first thing, and then enjoying a refreshing nutrient packed smoothie for breakfast. I have no rules as far as what kind of smoothie to have for breakfast, it doesn’t have to be a green smoothie or a veggie cocktail, just as long as it’s healthful, and loaded with nutrition. Since I get bored with drinking the same smoothie each day I’ve been treating myself to three different concoctions. My Strawberry Sunshine Beet Blast, a Tropical Avocado Smoothie, and this delicious Pear and Parsley Spiked Green Smoothie. It was extremely refreshing and revitalizing after my hard workout yesterday morning.
The Pear, Parsley, Cucumber and Coconut Water are what make this smoothie particularly refreshing. Both Pears and Cucumbers are loaded with beneficial antioxidants, and both are anti-inflammatory as well. The added bonus of throwing them into your smoothie is that their calorie content is relatively low for the nutrient boost they provide. Parsley also is a wonderfully healing herb, with vibrant color and great flavor it also boasts an amazing amount of Vitamin K, as well as being a rich source of antioxidant nutrients. It also provides you with a good dose of Vitamin A and C, and only has 1 Calorie per Tablespoon how awesome is that? Then you have the coconut water. There is a lot of buzz and hype about coconut water, particularly over the past couple of years as more and more companies began producing and selling it commercially to capitalize on it's popularity. Some people claim it's a miracle food, while skeptics say it's a scam. I personally don't drink coconut water because it's popular, I drink it because it's damn delicious, and while i'm not a food scientist, or doctor I can personally attest to the fact that after I drink it I do feel more energized and definitely more refreshed. It's certainly true that Coconut water is full of electrolytes - which are great to consume if you've just had an intense work out - it's also a great source of potassium - far better then say a banana, - but whether any of the other health claims are true only time will tell. In the meantime i'm going to keep drinking because it's delicious, and also very low in calories. Roughly 45 calories per 8oz provided you're buying pure, natural, no sugar added coconut water.
From the very first sip you take from this smoothie you just know you're drinking something that tastes great, and is great for you, and once you know that, it makes it so damn easy to keep going. Enjoy!
Pear and Parsley Spiked Green Smoothie
1 Pink Lady Apple
1 Large Banana
1 Large Anjou Pear
! C Kale
½ Large Cucumber
A pinch of Fresh Parsley (or more to taste)
1 tsp Spirulina
½ C Coconut Water
1/4 C Orange Juice (or as much as ½ C if you want the smoothie a bit thinner)
4-5 Ice Cubes (Optional)
- Place all ingredients into a high-speed blender and blend on high for 60-90 seconds until completely smooth. Pour into a tall glass and enjoy after a good workout!

Strawberry Sunshine Beet Blast...
Everyone wants to start the New Year off right. We sit down and make goals and game-plans and say we’re not going to do this and this thing today but we will do this and that thing instead. January is always full of positive energy and good intentions, but making those good intentions stick can sometimes be a little bit difficult for people. It’s part of why I don’t make resolutions - aside from the obvious, that if you want to change your life the best time to do it is now in the moment rather then wait for some arbitrary date. - Making resolutions almost sets people up for failure. For a lot of people it’s too much pressure, and when they don’t quite make their resolution the disappointment is too big, and too overwhelming. I prefer goal setting, and I set goals for myself all the time not just in January. Goal setting for me is more long-term, and sometimes the goals I set for myself are life-long. Goals are something I work towards and depending on the goal it doesn’t really matter how close I am to achieving it because every stride towards it is a stride in the right direction, and that alone is enough to fill me with happiness and positive energy.
I would say that whenever you’re making goals or resolutions less is more. Meaning, instead of making big sweeping declarations, start small. Your goals have to be realistic and manageable, and most importantly you have to know why you’re setting them in the first place. If you don’t truly want what it is you’re setting your goal for, you will never achieve it. If you say to yourself that you’re going to give up coffee, but inside you’re already looking ahead to when you might have your next cup - be it a week, a month what have you - then you’re not there yet. You’re not ready, and it’s not going to work. Instead of saying “I’m not going to have coffee again” say to yourself “I’m not going to have coffee today.” Work with that, and then move onto the next day and say the same thing. Don’t think too far ahead, and don’t think too hard about it. Make it simple, take it a day at a time, and that’s true of any goal not just giving up coffee or some other bad habit.
Of course if you are planning on leaving some bad habits behind for the New Year it’s always a good idea to replace them with a good habit. Replacing a bad habit with a good one makes the transition easier on you, and it makes you more likely to accomplish your goal if you feel like you’re getting something in return. I know for myself the most important thing in making sure I achieve my goals is starting the day out right. I know that sounds weird but if I start my day out right by getting up early, exercising, and enjoying a nutritious breakfast I find I’m overall happier and more productive throughout the day. If I sleep in, don’t exercise, and either don’t eat, or just eat whatever I’ve got lying around without putting my thought into it I’m much more likely to be lethargic, lazy, disagreeable, and spend the day wasting time. So that’s one of my biggest goals for this year, something I’ve been working on the past few days and I’m really feeling great about it.
As I said for me part of starting the day off right is about getting adequate - as well as delicious - nutrition in the mornings. I’m a total smoothie fanatic, as some of you probably already know, but after my summer holidays I kind of fell off of the smoothie wagon and wasn’t drinking them with as much regularity. Or I was drinking protein smoothies instead rather then fresh fruit and vegetable smoothies. This week I really wanted to make sure I got back on track as far as the smoothies go and so I came up with this delicious concoction yesterday. For some reason I’ve really been dreaming about beets, and what better way to utilize their amazing power, and their unique flavor? It may sound weird to you but I assure you it’s delicious and revitalizing, just give it a try! The color alone is brilliant!
Strawberry Sunshine Beet Blast
½ of a Large Beet or 1 Small Beet peeled and chopped
2 C Frozen Strawberries
Thumb Sized Piece of Ginger
1 C Unsweetened Almond Milk
1/4 C Orange Juice
2 Collard Green Stems
1 Tbsp Flaxseed
- Place all ingredients into a high-speed blender and blend on high for 60-90 seconds until completely smooth. Pour into a glass and enjoy!
*** Note - If you feel it needs a little extra sweetness feel free to add in a tsp or two of agave. Or a pinch of pure green Stevia.***

Sauteed White Kale with Hot Chili Oil, and Pickled Ginger...
Happy New Year Everyone!
I hope everyone had an enjoyable New Year’s Eve, and New Years Day. After an extremely busy December I’m thankful to have some peace, quiet and relaxation today. I’m looking forward to 2013, because I know it’s going to be a good year. I’m not the type to make New Years Resolutions. I think they’re a waste of time, because as I always say if you want to change something about your life just do it. I do have a couple of goals for this year though. The first one is just to live simpler. The second one is that I’d like to develop a good daily routine, so I can better manage my time and fit in everything I need to fit in. 3) More disciplined spiritual practice, and by this I mostly mean daily meditation. 4) I would like to work on developing greater muscle definition, particularly in my abdomen and upper arms. Finally I’d like to significantly decrease my sugar consumption. Now I say these are goals rather then New Years Resolutions because in truth I’ve already been working at them for the past couple of months, but now that a new year is here I want to really get serious about them.
So today I kicked off the New Year right, but cooking up a big bowl of delicious veggies for lunch, and dinner tonight is going to be the New Years Soup from “Clean Start” which is basically a Black Eyed Pea and Collard Green Soup. Simple, delicious and satisfying, but back to lunch. A few days ago when I was shopping for my groceries I came across a type of Kale I’d never seen or heard of before. It was called Ornamental Flowering Kale, and it came in white and purple. They were so pretty both in color and in design that I couldn’t help but buy some. They look like big flowers you might find in someone’s garden, but they’re edible. I really don’t know that much about this variety except that it’s supposedly not as tender or tasty as the regular varieties of kale, and that it comes in many other colors besides purple and white.
Since I was looking to make something quick and simple for lunch today I decided just to saute the kale in a big ‘ole pan with some leeks, garlic, and hot chili oil. The flavor of the overall dish was really fantastic, and as for the kale itself. I didn’t think it was any less delicious or any less tender then other kales I’ve eaten. It was perfect. Though unfortunately there isn’t a lot of color contrast in the finished dish for you to ooo and awe over, and I forgot to take a picture of the head of kale before chopping it up. Sorry, next time I promise. So here’s to starting the New Year off right! Do you have any resolutions or goals for 2013?
Sauteed White Kale with Hot Chili Oil, and Pickled Ginger
1 Head White Ornamental Flowering Kale Torn into bite sized pieces
1 Large Leek Sliced
4 Garlic Cloves Minced
2 tsp Hot Chili Oil ***
2 tsp Vegetable Broth
2 tsp Tamari
A few Drops Ume Vinegar to taste
Minced Picked Ginger to taste
- Add the leek, garlic and chili oil to a large frying pan and saute over medium-high heat until leeks are just becoming tender. Roughly 5-6 minutes.
- Add in the Tamari, Vegetable Broth and Kale. Saute for 5-6 more minutes covered, until Kale is tender.
- Add in the ume vinegar and give the mixture a good stir.
- Serve with minced pickled ginger on top.
*** Note - Depending on how hot your Hot Chili Oil is you may want to use more or less. 2 tsp made my dish quite spicy, so you may want to start with 1 tsp and go from there. Or if you would like to make this oil free, saute in water and add 1 tsp of Red pepper Flakes instead.

Tropical Greens Smoothie with Super Seedy Milk...
I love smoothies, I’m sure you know this by now. I especially love them in the summer, but this summer thanks to two extended vacations and a busy schedule I haven’t been feeling much creative inspiration in the smoothie department. I still drink a smoothie each morning of course but over the past month and a half I’d say I’ve mostly been drinking flax-milk chocolate vega shakes. They’re delicious of course but nothing that really needs to be written about.
Well yesterday I decided to try something new. I decided to make some homemade seed milk. I’d made homemade nut milk before and that was fun and easy, so I thought I’d give seed milk a try. It’s even easier then nut milk because you don’t have to filter out any pulp and it gets super creamy without having to soak the seeds first. Of course the recipe makes quite a bit (3-3 ½ C) so today I wanted to make sure I used up some more of it. Of course the next logical question became “What should I use it on/in?” After a bit of thought I decided a good belly-filling smoothie was just the ticket, and since I’ve been thinking a lot about the glorious combination of pineapple and spinach that seemed the natural choice for the smoothie.
The seed milk on it’s own is a bit bitter, as you would expect from sunflower and sesame seeds, so I wasn’t sure how it would pair in a smoothie. However I figured pairing it with sweet frozen pineapple could only make a good thing better and I was right. This smoothie came out so creamy and delicious, really you won’t believe how creamy it is! The seed milk becomes a subtle flavor addition and the tropical flavors really shine through. A perfect blend, and super filling, which is great for a first day meal.
I know it may sound a bit weird “Seed Milk” but trust me, this smoothie is delicious! And the best thing about it is that this is a super quick and easy way to get in some greens and some seeds. Two food groups I think a lot of us often neglect.
Tropical Greens Smoothie with Super Seedy Milk
1 ½ C Frozen Pineapple Chunks
1 Big Handful Baby Spinach
1 Banana
1 C Super Seedy Milk (Recipe Follows)
½ - 3/4 C Filtered Water
- Place all ingredients into a highspeed blender and blend on high for 1 minute or until completely smooth and creamy. Pour into glasses and enjoy with a nice bowl of strawberries!
Note - If desired you can use half frozen pineapple chunks and half frozen mango chunks to give the smoothie a slightly more tropical feel.
Super Seedy Milk
3/4 C Raw Sunflower Seeds
1/4 C Hemp Seeds
1/4 C Sesame Seeds
4 Medjool Dates
A Tiny Pinch of Cinnamon
2 ½ - 3 C Water (Depending on how thick you want it)
- Place all ingredients into a highspeed blender and blend on high for 1-2 minutes or until the milk is smooth and creamy. Add more or less water for your preferred consistency.
- Store leftover super seedy milk in an air tight container or mason jar in the fridge for 3-5 days. Shake well before using because the milk may settle and or separate when in the fridge overnight.

Tropical Omega-Boost Smoothie...
When it comes to getting my Omega-3's some weeks I do really good and make sure I take in a wide variety of flax, chia, walnuts and leafy greens, while other weeks I fall into a rut of nutritional neglect. I’m sure you can relate. Maybe you get busy, or maybe you get a taste for food that’s a little more decadent -and possibly less nutrient dense, - maybe you simply forget, or just don’t ‘feel like it’ some days. Well I know how that goes. So on Saturday I came up with a super easy, and delicious omega-rich smoothie that’ll have you begging for more. The flavor is so sublime that you won’t have to coax yourself into making it because you’ll wake up craving it!
Interestingly this smoothie came about not only out of a desire to make sure I get my daily flaxseed, but also in an attempt to clean out my refrigerator before going away on vacation. All the ingredients in this smoothie I had in abundance, and all of them - except for the flaxseed - needed to be consumed before I leave. I wasn’t sure what I’d end up with after mixing them all together but that’s what experimentation is all about right? The end result was far better then I imagined. The smoothie Is rich and creamy, it’s sweet, sour and tropical, and as an added bonus it’s both sugar and stevia free. Despite being free of sugar or other sweeteners this smoothie tastes exactly like the sort of thing you’d pick up at one of those chain smoothie joints in the mall. Dare I say it almost taste decadent? It’s a tropical paradise in a glass, and I strongly urge you to give it a try.
A quick note about the mango. You can use any kind. I’ve made this smoothie every day since Saturday and I’ve made it both with the big red mangos, and the smaller yellow mangoes. I’ve also made it with overripe, perfectly ripe, and under ripe mango, each time it came out fantastic. Keep in mind however that if you use overripe mango the overall drink will be sweeter. If you use under ripe mango the drink will have a more sour taste, which I actually liked quite a lot. In fact it reminded me of a thick yogurt. I’ve also used both unsweetened Flax milk, and Vanilla Flax Milk. It came out brilliant both times, though of course using the vanilla flax milk will give it a subtle hint of vanilla flavor, as well as make it a bit sweeter. Any way you decide to make it I hope you enjoy it!
Tropical Omega-Boost Smoothie
1 ½ -2 C Your Favorite Flax Milk (Depending on how thick you want it.)
1 Large Mango Peeled, Stone removed, and cut into chunks
1 Large Banana
1 Pink Lady Apple Peeled and cut into chunks
2 Tbsp Ground Flaxseed
4 Tbsp Organic Unsweetened Applesauce
- Place all ingredients in a high-speed blender and blend on high for 60-90 seconds until completely smooth and creamy. Pour into a glass and enjoy!

Roasted Chili Lime and Indian Spiced Chickpeas...
Garbanzo Beans or Chickpeas as they’re also called are my hands down favorite bean ever! Well, I love other beans of course, and If I had to pick I’d say black beans, lima beans and edamame are right up there with chickpeas but chickpeas were the first bean I fell in love with so they’d always hold a special place in my heart.
I truly love them in anything. Soup, chili, stew, salad, sauteed with greens and other veggies. In rice, cous cous, or farro dishes, obviously as hummus. I love them in traditional Indian, Middle Eastern and Hispanic dishes, I just love, love, love them. They are probably the bean I buy and eat most frequently but sometimes - if you’re like me - you don’t want to go through the whole rigamarole of making something just to enjoy the one ingredient you love. Am I right? Now, I am no stranger to eating chickpeas right out of the can, I do it often, and it’s delicious, but some days you jsut need a little more than that, but you want something less than a meal. Well roasted snack chickpeas are just the thing!

Now roasting chickpeas isn’t exactly a new idea, so I can’t take credit for it. I’d seen mention of it before in magazine’s and online articles that connected to ‘healthy snacking’ though always intrigued by the idea I’d never actually thought to do it until last week. By then the recipes I’d previously seen were distant memories but roasting chickpeas seemed an easy enough task. All I needed to do was decide what flavorings I wanted to use. In the end I decided to go with a Mexican inspired flavor, and an Indian inspired flavor. Since they are two of my favorite types of cuisine and both traditionally use chickpeas it seemed a no-brainer.

I was so impressed with the finished result. Not only do these things cook up fast, but they’re delicious! Absolutely-freaking delicious. They’re a truly healthy snack, and hearty too. The perfect thing to munch on pre-dinner when you usually reach for the sweets. They’re great served hot out of the oven or at room temperature, and truth be told they’re not half bad cold either. Bring a batch to your next BBQ or pot-luck and stick them on the snack table beside the chips, dips, pretzels, and party mix. They’ll be a sure fire hit.
Roasted Chickpeas 2 ways
(Cooking Instructions are the same for both)
Chili Lime Roast Chickpeas
1 15oz can Chickpeas
1 ½ Tbsp Lime Juice
½ Tbsp Agave Nectar
3/4 tsp Chili Powder
3/4 tsp Ground Cumin
Sea Salt
Indian Spiced Roast Chickpeas
1 15oz Can Chickpeas
1 Tbsp Lemon Juice
½ Tbsp Agave
½ Tbsp Olive Oil
3/4 tsp Curry Powder
3/4 tsp Gram Masala
1/4 tsp Ground Coriander
1/4 tsp Ground Cumin
Sea Salt
- Preheat oven to 400'F
- Drain and Rinse Chickpeas, then pat dry. Try to get them as dry as possible, before transferring them to a bowl.
- In a separate small bowl whisk together all flavor ingredients, both liquids and spices.
- Pour over the chickpeas and stir until thoroughly combined.
- Spread chickpeas in a single layer over a parchment lined baking sheet. Bake for 10-15 minutes then stir and bake another 10-15 minutes until chickpeas are brown and crispy.
- Remove from oven and transfer to a serving bowl, serve hot or refrigerate in an airtight container for later.
*** Note - For an Oil-Free version of the Indian Spiced Chickpeas Omit Olive Oil and use Lemon Juice or Tamarind Paste instead.***
PS: This probably goes without saying but if you decide to make both flavors at once do not put them on the same baking sheet. Use two different sheets!

The Beauty of Ramps - and Terry Walters ‘Cannellini Beans with Sun-dried Tomatoes and Ramps’
Yesterday I ate ramps for the first time, and my tastebuds totally exploded! Now if you’re unfamiliar with ramps let me enlighten you, because they are a whole world of awesome.
Ramps belong to the onion family, and go by the alternate names of ramson, spring onion, wild leek, wood leek, and wild garlic. They’re native to North America where they grow from South Carolina all the way up to Quebec. They are particularly popular in the cuisines of the rural upland South and Quebec, and have been gaining in popularity amongst upscale restaurants throughout North America. Throughout Appalachia they are considered particularly special, and many festivals are often held each spring either in their honor or with ramps as a culinary focus.
Ramps are characterized by smooth, flat, broad green leaves and stems that are somewhere between red and purple. Their stock/bulb is very similar to that of a scallion. Taste wise their flavor falls somewhere between that of garlic and onions with their leaves having a milder flavor then their bulbs.
Now that you know what they are, let me tell you about how I happened to come across them.
Until I purchased the cook book “Clean Start” I didn't even know what a Ramp was, but once I knew it didn’t matter because I couldn’t find them for sale anywhere. As a lover of all things garlic and onion the one recipe that calls for ramps in “Clean Start” had caught my eye and piqued my interest, but as badly as I wanted to try it, I could not. Ramps you see have a very short season, and are usually available for only a short time between end of March and Early May. Not being able to find them, I forgot about them entirely, until ast weekend.
I was doing my grocery shopping, and I was in the mood for Garlic Scapes. Another delicious spring vegetable only available for a short time in spring. I asked my friend SC who works in the produce section of my local grocery if he had any scapes in or if it was still too early for them. He said that they’d just gotten scapes in the day before. Excited I followed behind him as he directed me to a produce shelf. However once we got there I saw immediately that they were not scapes but ramps. “Aren’t they the same thing?” he asked, and I informed them that they were not. I was all set to leave disheartened by not having found any scapes when I suddenly remembered that recipe from “Clean Start” and how rare it is to find ramps. Finding them right then, on that particular day seemed like a miracle and so I bought two bunches to bring home.
Yesterday was my first chance to try them out, and of course I decided to use Terry Walters recipe for Cannellini Beans with Sun-dried tomatoes and ramps. Generally speaking I’m not a fan of Cannellini beans, not canned at least but that’s all I had, and I figured why not at least try it? I am so, so glad I did. I made this dish for lunch and it was the most amazing, mind-blowing thing. The flavor of the ramps was incredible, kind of like a strong chive mixed with a bit of garlic, and it paired beautifully with the sun-dried tomatoes and the creaminess of the beans.
Honestly, I couldn’t stop Mm-Mmming the entire way through the meal and I don’t typically do that. I fell instantly in love with the dish and the ramps and have made the decision that buy oodles and oodles of ramps when I go grocery shopping today. I can not wait to find out what other delicious configurations I can come up with for these delicate wild onions.
Please do yourself a favor, next time you’re out look for ramps, and if you find them buy them! You won’t be sorry, really!

Berry Oatmeal Breakfast Smoothie...
I’ve been drinking oatmeal smoothies for years now, and it seems the mainstream is beginning to catch on to how awesome they are. I noticed while out grocery shopping recently that the juice company Naked has a new line of fruit flavored oatmeal shakes on the market. I’ve tried a couple myself and I have to say they’re not bad, and they seem to be slowly gaining in popularity. While it’s nice to see new vegan-friendly products entering the market all the time, offering a wide breadth of choice, nothing could be easier then making your very own oatmeal smoothie at home. Plus if you do it yourself it’s cheaper, more nutritious, and lower in sugar.
An oatmeal shake is perfect for breakfast on the go, or for those of us who may not always be in the mood to eat in the morning and so prefer a liquid breakfast. That’s basically what propelled me to make my first oatmeal smoothie several years ago. You see, I actually really love oats and oatmeal, but I’m not always the best at eating it on a regular basis, and I’m sure others out there can relate to that. For me oatmeal is something I have to be in the mood to eat and honestly when I’m ravenous I don’t have the patience to wait for it to cook. Which makes the oatmeal shake a perfect solution!
The other great thing about starting your day with an oatmeal smoothie is that you’re truly starting your day off right, because they are absolutely packed with nutrition and have sufficient calories to keep you full and energized straight to (or perhaps even past) lunch. Perfect if you have errands to run, meetings to attend or a lot of work to file by the end of the day. An oatmeal shake is also a healthy way to keep an eye on your weight as the high protein content will keep you full longer and help prevent you from snacking before lunch, or even gorging when lunchtime comes around.
Oh and did I mention that oatmeal smoothies are delicious? ‘Cause they are. I promise I wouldn’t say it unless I meant it, and I certainly wouldn’t drink them if I didn’t think they were totally bomb.
I tend to switch up my oatmeal shakes from time to time but the following recipe the one I make most often. I’m particularly fond of the blueberry and oatmeal combination, I mean really is there anything better? I think not, especially when you blend in some super smooth and creamy almond milk and finish it off with a dash of cinnamon. Perfect breakfast heaven!
So even if the idea of oatmeal in a shake sounds strange to you, don’t be afraid to give it a try, you just might find yourself amazed!
Berry Oatmeal Breakfast Smoothie
2 C Fresh Blueberries (can use frozen if you like)
2 C Almond Milk (unsweetened or original)
1 Pack Frozen Acai Berry Puree (Thawed)
3/4 C Rolled Oats
1 1/2 Tbsp Hemp Seeds
½ tsp Ground Cinnamon
1/4 tsp Ground Cardamom
1-2 packets stevia (optional)
- Place all ingredient in a high-speed blender and blend on high for 30-60 seconds until smooth. Pour into glasses and top with additional blueberries and hemp seeds for a lovely presentation!
And, just to give you an idea of the wonderful nutritional content of this smoothie, here are a few facts and figures taken right from the backs of the cartons/packages of the products I used. Obviously percentages will vary slightly depending on which brands you use, but you get the idea.
2 C of Blueberries = 48% Vitamin C, 28% Fiber, 70% Vitamin K
1 Pack Acai Berry Puree = 5% Fiber, 15% Vitamin A, 4% Calcium, 6% Iron, 1g Protein, 8% Vitamin C3
3/4 C Dry Rolled Oats = 22.5% Fiber, 7.5g Protein, 15% Iron,
1.5 Tbsp Hemp Seeds = 4% Fiber, 5g Protein, 10% Iron,
2 Cups Almond Milk (Silk Original) = 4% Potassium, 8% Fiber, 2g Protein, 8% Iron, 100% Vitamin B12, 20% Vitamin A, 50% Vitamin D, 90% Calcium, 20% Zinc
If you drink the entire blender full, then that’s an incredible amount of nutrition, heck even if you drink half the blender you’re still getting a whopping amount of both calcium and protein, so don’t ever let anyone tell you that as a vegan you don’t get adequate nutrition, in fact if you’re eating healthfully you’re probably getting superior nutrition. Considering that animal flesh doesn’t contain fiber, antioxidants, or vitamins and comes along with a heaping side of saturated fat. So drink your oats and be happy!

Product Review - Mmm... Tea Raw Kombucha...
The other day when I posted about GT’s Kombucha I mentioned that a new brand of Kombucha was slowly winning my heart. Excluding GT’s and the Kombucha I drank while in Maui Mmm.. Tea’s Elderberry infused Kombucha is one of the best I’ve drunk.
This line of Kombucha just recently made it’s way to my local health food store and so far I’ve only seen four flavors. Original Black Tea, Original Green Tea, Elderberry Black Tea, and Elderberry Green Tea. Both versions of the Elderberry are amazingly delicious. The flavor is tart but sweet, yet not to sweet, and I find it has a much milder taste then the other kombucha I’ve tried including GT’s. Which is great for those weary of kombucha or those not accustomed to the taste. While it’s definitely tart, it’s less vinegary, and imparts less of a burning sensation when you drink it. I look forward to trying the original flavors.
Another cool thing about this Kombucha if you live in IL, and care about your carbon footprint - it’s local! The company is based in Buffalo Grove. Like GT’s Mmm... Tea is also vegan, raw, free of preservatives and GMO’s. Low calorie, and low carb. Though it does contain organic ingrdients it’s not certified organic as a whole, it also contains cane sugar but not much. 6g per bottle.
While it has yet to surpass the awesomeness of GT’s in my eyes, it is very good and I quite enjoy it. I like to alternate between them drinking GT’s for a few days, and then drink a couple Mmm... Tea’s. I only wish Mmm.. Tea had a larger selection of flavors. Perhaps soon.
In addition to all the health claims about Kombucha that I mentioned in my post about GT’s. Kombucha is also said to support overall immunity, and promote a healthy metabolism meaning it can supposedly help you control your weight. Who doesn’t love that? Really, is there anything kombucha can’t do?
I’ve been drinking a kombucha a day for roughly two weeks now and I feel great, absolutely fantastic, and I should mention that since I typically drink it in the afternoon after a walk or some other form of exercise I find it does help stave off food cravings and hunger pains. Which is fantastic, when my stomach isn’t groaning and threatening to consume itself out of desparation I find I’m far more likely to take the time to make a healthful nourishing snack rather then just grab whatever’s lying around. So if weight control is something you’re struggling with you may want to consider drinking Kombucha regularly to see how you feel and how it works for you!

The Rejuvenator...
It’s an absolutely gorgeous day in Chicagoland today. Sunny, and warm with a nice breeze. My favorite kind of day and I’ve been taking advantage of it by spending time outside walking and hooping, and by having all the shades and windows open while I’ve been in. It’s amazing just how good a little sunshine and exercise can make you feel!
Now I don’t know about you but I know when the seasons begin to change I begin to change with them. My habits, my food choices, my overall routine - it all shifts. During the cold winter months this usually means I eat hardier heavier fare, exercise less and stay indoors more. Something I always feel good about in the beginning because who doesn’t like to laze about a bit after the long hot sweaty months? Truth is though, I hate being cooped up indoors, I hate the stale re-circulated air, and I hate not being able to go for long walks or ride my bike. Then of course there’s the food, now as much as I love stews, soups, chilies, pasta, baked goods, sweets and creamy gooey comfort food goodness there always comes a point where I feel enough is enough. By the time Spring rolls around all I want to do is run, and eat salad. Even if I haven’t gained any weight over the winter - which I usually don’t - I always feel heavier, bogged down, and just generally sick of spirt I suppose. Which is exactly how I was feeling last Friday after a week long adventure in cooking Latin food. It was so good - mouth watering good, and it was so much fun to begin learning a new cuisine but by the end of the week I just wanted to die. I was so stuffed, so tired, so clogged up; everything about my body and my spirt felt out of whack, they were no longer working in harmony with one another, and I felt awful.
The only way I know how to remedy this is to get myself back to basics. Get off the sugar, get off the starch, get off the corn, soy and wheat. Get myself back into a routine of green smoothies, salads, and a lot more fresh raw produce. Cutting all that out and just eating and living simply is the best way to flush out the body and restore balance to both your physical and spiritual self. After only two days I’m feeling better, healthier, lighter, happier and more positive then I have in months. It’s a wonderful feeling, and so I wanted to share with you the smoothie I made Saturday morning to get myself back on track. It’s so delicious and invigorating that I drank the entire blender full in about twenty minutes, and felt fantastic all day. My sugar cravings diminished and my belly stayed full all afternoon without making me feel like death, not to mention I felt less tired and more energized.
I highly recommend you kick off the new season with a cleanse of your own, and include this refreshing, rejuvenating drink!

The Rejuvenator
2 Cara Cara Oranges***
3-4 Large Kale Leaves
1 D’Anjou Pear
1 Banana
1 Granny Smith Apple
1 tsp Spirulina
2 C water
1-2 Tbsp lemon juice
1-2 packets stevia
3-4 sprigs Fresh Mint
- Peel oranges, and remove as much pith (the white skin covering the fruit) as possible.
- Place all ingredients except Stevia in a high-speed blender and blend on high for 60 seconds or until well blended and completely smooth. Taste for sweetness and add stevia to taste.
*** Note - You could use Navel Oranges if you don’t have Cara Cara, however the Cara Cara oranges add a really unique and delicious flavor to this smoothie that Navels will not. Cara Cara’s are a favorite of mine, and for good reason, so I highly recommend you try them if you can find them at your local grocer or farmer’s market. ***
